These are a really yummy, and different type of gluten-free pancake. I have never made them before, but I played around with them this morning and the whole family loved them, including the 10 month old baby. The plantain flour is very thick, so make sure you add enough liquid to thin it out. IContinue reading “Plantain Flour Pancakes”

Gluten Free/Sugar Free Chocolate Chip Cookies That Don’t Suck
April 18, 2020 These sound terrible when you read the title, but they are VERY tasty. They won’t leave you feeling a sugar hangover, and they are really easy to make. I used Swerve sweetener, which is a natural sugar alternative,Continue reading “Gluten Free/Sugar Free Chocolate Chip Cookies That Don’t Suck”

April 18, 2020 I am not a meat eater. My husband is, however. Usually, he only eats meat when we go out to eat. BUT, we are in quarantine. So today, I made up a fun version of stuffed cabbage. I always like to experiment how different foods make me feel. Lately, I’ve been taking out lectins. I’m not going to go into what lectins are, but if you’re curious, you can read about them here. You say potato, I say tomato…bake
The other night I was trying to figure out what to make with the limited veggies we had. I decided to use those, along withContinue reading “You say potato, I say tomato…bake”

We were lucky to get a big box of veggies from a local restaurant doing grocery take out this week, but I didn’t know what we would have. So today,Continue reading “Kitchen Sink Soup”
Purple Sweet Potato Stew
This recipes is hearty and super simple to make. Feel free to get creative — swap out the greens or beans for some different flavors. I’d imagine red Thai curry would go great with the recipe as is. Serve over your grain or green of choice. We do a lot of quinoa in our houseContinue reading “Purple Sweet Potato Stew”
Kitchari
Kitchari is an easy and delightful treat for the whole family. You can easily control the spice and flavor, even adding some more after the dish is done if you are making for children who aren’t used to as much spice. What I like about kitchari is that their aren’t many rules — you can mix and match your veggies and grains endlessly.
