You say potato, I say tomato…bake

The other night I was trying to figure out what to make with the limited veggies we had. We ordered a box of veggies from a local restaurant doing take-out groceries and I was surprised to see some delicious looking YELLOW canned tomato and some lovely little potatoes. I decided to use those, along with some beans and red canned tomatoes. The result was pretty delicious. Makes 4-5 servings.

Ingredients:

8-10 small yellow potatoes, whole

Olive Oil

Salt

Pepper

One yellow onion, sliced

5-7 cloves of garlic, chopped

wOne 16 oz can of tomatoes

One 8 oz can of tuscan white beans

Seasoning could include: oregano, sage, thyme, rosemary

  1. Boil or pressure cook your potatoes. While that is happening, prepare your onions and garlic. Also, set the oven to 375. Remove potatoes when you can pierce them with a fork.
  2. While you wait for those potatoes, sauté onion and garlic until fragrant.
  3. Add the canned tomatoes, and canned beans. Add salt, pepper and seasoning of choice. Let it boil, then bring to a slow boil for 30 or so minutes.
  4. Meanwhile, put the potatoes on a pan and roast them as the sauce simmers.
  5. Once the sauce is cooked, take the potatoes out and top with with the sauce. Place back in the oven for about 10 minutes. I added some more olive oil here. It might be nice to throw some parmesan on there, too, if you eat cheese.
  6. Enjoy this delicious dish! It was a big hit in my house.
