
The other night I was trying to figure out what to make with the limited veggies we had. We ordered a box of veggies from a local restaurant doing take-out groceries and I was surprised to see some delicious looking YELLOW canned tomato and some lovely little potatoes. I decided to use those, along with some beans and red canned tomatoes. The result was pretty delicious. Makes 4-5 servings.
Ingredients:
8-10 small yellow potatoes, whole
Olive Oil
Salt
Pepper
One yellow onion, sliced
5-7 cloves of garlic, chopped
wOne 16 oz can of tomatoes
One 8 oz can of tuscan white beans
Seasoning could include: oregano, sage, thyme, rosemary
- Boil or pressure cook your potatoes. While that is happening, prepare your onions and garlic. Also, set the oven to 375. Remove potatoes when you can pierce them with a fork.
- While you wait for those potatoes, sauté onion and garlic until fragrant.
- Add the canned tomatoes, and canned beans. Add salt, pepper and seasoning of choice. Let it boil, then bring to a slow boil for 30 or so minutes.
- Meanwhile, put the potatoes on a pan and roast them as the sauce simmers.
- Once the sauce is cooked, take the potatoes out and top with with the sauce. Place back in the oven for about 10 minutes. I added some more olive oil here. It might be nice to throw some parmesan on there, too, if you eat cheese.
- Enjoy this delicious dish! It was a big hit in my house.
